"Or acceptable to the AHJ", that’s the kicker, find out who that is in your area, and go talk to them, it may depend on your area, this industry is strictly regulated in some areas and in others not at all.
You may even find that the AHJ doesn't even know what NFPA code 96 says in regard to Kitchen Exhaust cleaning.
Remember NFPA is only a guideline, it is up to the AHJ to decide what the law is in their area, but at the same time don't discount it, and it can and is a very important tool.
You may also find that most of your customer won't know what it says. If you are serious about getting into this business you should pursue that certification, but nothing can replace experience, don't quote me but experience I think plays a part in that certification, don't remember exactly how it ties in but I am sure it does.
To answer your question yes it can be done.

NFPA 96

The NFPA does not make codes. They only make suggestions in the form of Standards. The NFPA 96 is a compilation of standards pertaining to "Ventilation Control and Fire Protection of Commerical Cooking Operations". If it is adopted by the AHJ it then becomes a code. If it hasn't been adopted then there is probably no requirement for certification. If you will speak with your local fire marshall he could answer your questions.

If possible pick a small job, that has a little fairly straight vertical duct, and a fan you can easily remove. Go for it. Try to set up a job that can be done on a day the customer is closed. Anything that can go wrong probably will and the extra time you have allow you to fix the problem. As long as you already know the steps involved in hood cleaning.
