Looking for advise on grease.

Was hoping some one could give some help here.Above are a few pictures of a Chinese restaurant that has been closed for two years. The building belongs to one of my customers and I would like to help him out, however, I do residential and have NEVER cleaned any hoods, equipment ect. for kitchens before. I have worked in many kitchens when I was younger and know what things should look like and how to clean them the ol fashioned way (with a lot of elbow grease and a bucket). The area is apox 800 sq feet. There is a WOK station (4th pic) a hot box reach in (3rd pic) a two door cooler reach in, a 7' sink station, a 6x8 walk in cooler, 2 hood vents. The last tenants did not keep the kitchen very clean, grease build up is significant including floors walls and equipment. I have a 4k psi 4gpm cold water machine, the dual pump system from paul, surface cleaner ect ect, I do not have a hot water machine. My question is this, what kind of detergents soaps chemicals can i use with the equipment I have thats made for kitchen grease that is built up like this. Customer wants everything cleaned, walls floors equipment ect. And with the mentioned equipment, sq footage, and providing its something I can accomplish without hot water, whats a fair cost of doing the job.. Any input is helpful.
 
You might need certification to clean the hood system. I don't clean hoods so I'm not sure the requirements. For almost everything else that is that is not aluminum, a caustic degreaser is what you need. I would go with a potassium hydroxide base degreaser, a sodium hydroxide would work if that's all you can get. You will need a good degreaser, can't suggest any because we make our own but, I'm sure someone can recommend a good one. Also, if you don't have hot water you are better off leaving your pressure washer at home and hooking a garden hose up inside the restaurant and cranking up the hot water full blast. Scrapping and scrubbing will be a must.
 
I would call some professional hood cleaners, a lot of them charge 2x to 4x on chinese food places because of the hard to remove peanut oil they use.
 
Make sure you have the proper insurance before you start a job like this. It's not just regular General Liability either. I have never had any interest in cleaning hoods or anything of that nature. I just give them Grant's phone number and let him take care of it.
 
thank guys for all your input guys, I guess I was hoping for some miracle degreaser I could spray through my pumps that would eat through all that crap but without the proper equipment or experience I really dont want to bite of more than I can chew, not fair to me or the customer. Never been one to say no but prob going to pass on this one.
 
After over 25 years of hood cleaning my advice is……………Run Forrest…….Run. I did exactly what you are trying to do. I lost a friend. Eventually they had to call in someone with a self deprecating attitude. Making your friend happy is gonna make you really unhappy. Just say, you are not qualified to do something of that size and difficulty. (PEANUT OIL) Help him/her find someone but do not get in the middle of that.
Here is something to think about. You buy a wok. There are instructions as to how to "season it". Make it non stick is what they mean. You coat it with peanut oil, a thin coat, and bake it and voila, non stick. Well imagine that about a thousand times worse. Plus even the most aggressive chemical has difficulty moving that stuff. You will end up scraping and scrubbing and scratching every inch of it. Again RUN FORREST RUN.

You think I am exaggerating? How much you wanna bet he tries to do it? Never fails. Tru Dat. All I can do is offer my experiences and advice and like a young adult man , he will do the exact opposite. Years of experience mean little. Oh well.

Ed if I has turned my first line cleaning down years ago I would have not grew my restaurants as large as I have. I would have the interior cleanings that pay 6000 a night at grocery stores to clean there back ends.

This is what we do, we clean stuff. Often there's no other way but to dig in an experience. If he fails he will learn how not to on the next one. If he never tries he will never have learned from his mistakes.
