Does anyone know why this happens?

I noticed whenever I do before and after pics of pavers, they appear to change color. This pic is a prime example. I did not edit or retouch this photo at all. It looks like the camera changes lighting and settings by itself. I don't like before and after pics where it is obvious that there is editing going on that makes the before pic look worse than it is and the after looks better than it really is.

They look great, after they dry do they still look that good?

The next day or week.....still look that good?

Exactly! That your camera's sensor reacting to sunlight, which is really bad for photography - the worst.
 
There is a big shadow over the area for the before. Looks like a tree and you can see the overhead structure in the photo. Sun shifted while you were working more overhead for the after shot and the pavers are clean making for better light reflection and there's more of it. don't knock it nature working with you. Damn good looking clean up too awesome job.

Yeah they get that white haze when they are completely dry, but they still look really good.

Here are some different jobs that the same phenomena occurred.

It's lighting, when there is more light shining on an object(not just in the sky) then the lens picks up a wider band of colors. You clearly are taking those photos at different times of day, so that's your answer.
