There is a guy here in Jefferson County Mo. that uses 3 x 5 index cards and writes the date and company name on it for the certification sticker. He goes all out though and uses duct tape instead of scotch tape to fix it to the hood.

Funny story yesterday. We actually did a restaurant where they forged the hood sticker. It was a xerox copy of another company's sticker that they taped on. We didn't say anything though. It was a small enough hood that it didn't take too much extra time. Believe me though that sucker was dirty!!!!! It was to the point where the grease charred. (It looked like coal.) Oh well!!
