What is the best chemical to use on Exhaust hoods? How much and where do you get it?

I am taking a buisness class and in the marketing stage, how much do you charge for hood cleaning?. The last company I worked for was charging 350-400 a resturant. There is no code for hood cleaners how much they make, how many are in business, you have to classify them as Janitors.
