Went to do an inspection at a former( Long john silvers) fish fry place now called taco johns, they have a system I havent seen before. its 12' long like a bench and is SS all the way down and has a 10x14 SS duct that goes up through the roof to what appears to be an inline type fan laten with the hardest grease I have ever seen. the fryers are under this bench and catches all the grease with several acc panels along this, but no filters.the fire system cables runs straight down it also, can anyone help me with this system(cleaning)? Already gave them a bid with somewhat of a worst case price fomula. I have a funny feeling they are going to call me tommarow to do it! O'Well I need the expereince any how.Just need to find out ways to clean it. Thanks Mikey.
