Baffled grease filters also require the flame to travel around the baffles, thus keeping the flame from impinging on the greasy sheet metal, and spreading into the plenum and duct.

Mr. Ackland's book "Fire Investigation in Commercial Kitchen Systems"referencing NFPA 96, points out that a grease filter and a spark arrestor are not the same thing. He uses a photo for clarity. See page 13 of Chapter 4. A most fasinating book, showing good and bad examples of exhaust systems, fire suppression systems, and resulting problems. I just got home from a Mickey D's and out of 5 hoods, 4 had the wrong filters turned horizonaly.....It's hard to believe that a place like McDonalds can't even get their filters right.

i just got thru with an exterior job there this morning and by the looks of the way its ran where i was i cant beleive they were even able to get the filters in at all
