Would anyone be willing to tell me how to clean fryers, with out using boil out.... My chemical is of course usda approved...

I have heard country time lemonade, right out of the tap, But I do not want to spend more than 15 minutes a feyer...

How are you currently doing it? If you aren’t willing to spend more than 15 minutes a fryer I would suggest not doing them at all.
I'm sure the fryers you have to clean have not been maintained and are probably pretty bad, with a nice golden sticky grease coating everything under the fryer, and a nice accumulation of carbon in the fryer it's self.
I stay away from equipment as much as possible because it can be time consuming. Boil out is the best thing I have used for carbon, and the rest of the fryer we do pretty much the same way we do exhaust systems. Scrape, chemicals, pressure wash, repeat, and maybe even throw in a little scrubbing for good measure.
Remember I try to stay away from equipment cleaning so maybe I am not the right person to answer your question.
 
I am thinking about offering that service. I was wondering what to charge. The reason I was looking at it is , one of the Sonics I clean for caught on fire. The deep friers caught on fire from the grease build up. I figured it could make me some extra money and reduce their chances of fires. I was figuring $100 to clean it, estimating an hour of work. Would that be resonable?
 
Are you talking about cleaning the outside only, or the whole thing? Dealing with the carbon build up can greatly increase your time. You should try to clean one even if you have to do it for free or a reduced price. Nothing beats experience, and that may answer your questions for you.
I'm sure you know what you can charge often depends on what they are willing to pay, you then have to decide if that is worth it to you.
 
What happened was that I original told the guy I would not touch the inside of fryers, well on the second cleaning, He calls to complain... You did not touch my fryers... Did what I was suppose to, the outside scrape.... In order to keep the account I told him I would clean them, I have the money in the bid to do it, but I only have a hour worth of time to make it work.... They are not to bad, they have been maintained over the years, they are on a three month intervals, and only do dinner....

I meant I want the whole operation to take about a hour, with four fryers to do...

I hope I can reach my goal...

If you are going to clean the entire fryer, (inside, outside and underneath) it is my guess that it will take about and hour per fryer. A word of warning. Do not attempt to clean a fryer with a computer chip present unless you plan on doing the whole thing by hand. If you use your pressure washer, or even a hose, water will get into the computer chip. A mistake that will cost you between $500 and $1000.

I see you have been a member since April, glad you finally posted. The more the merrier, or more people to disagree with. I guess it depends how you look at.

I get tired of hearing myself talk sometimes.

My guys recently cleaned 3 Burger Kings. Two of them had there timers mounted on the canopy. At the 2nd location three of the four fryers would not work. They say we trashed the computers!

You guys that have been doing BK's on a regular basis, how to you protect these computers or does the kitchen staff remove them before you clean?

Hello Dave,

We do some Burger Kings, Never had a problem with the fryers, They are mounted on the top of the fryer hood, It seems like they have a gasket problem. We spray water all over the hood and never had a problem yet. Hopefull we have not been just lucky.

Are biggest problem is making a tarp to catch the water, back wall is loose as a goose and the sides are spot welded so plastic never goes in and stays.

Matt, if the back wall is loose enough you may be able to clamp it, if you remove the rubber tip from the clamp, if not shove some pieces of cardboard in with the plastic.
 
That is what we do now, Its just a shim about three to four inches to take up the void.

I also should tell everyone that I was able to get my fryers clean in an hour. Came right off with the chem that I use with little or no effert.

Hello Matt,

I will talk to the manager of the location that had the problem and the owner of all three of them next week.

If these chips have been in service for a long time I hope we can work out a mid point on the sharing of the replacement costs! Local tech said that this location is going to replace the computers themselves. He thought that the cost of each will be in the $200 to $500 range.
