The Real Deal on Chili

Ok, heres the deal. When I fix chili, I put macaroni noodles in it. My wife thinks I am totally idiotic for doing this. She makes fun of my chili and the fact I like peanut butter sandwiches with my chili also. If you don't have the macaroni in it, you might as well be eating hot dog chili. I am from Kentucky, born and raised, and REAL chili has macaroni (or even spaghetti). She is a Yankee; which explains a lot of things, but is that the reason she has no taste in REAL chili and the foods that go with it?
 
Have you ever made chili with deer sausage? It's good! Made some last night. :)

I have always heard chili, with macaroni noodles in it, referred to as goulash. I like peanut butter sandwiches with my chili too, must be a midwest thing. The peanut butter sandwich kinda suppresses the fire.:p
 
noodles are good with chili I like my chili over the top of noodles. PBJ has to be eaten with tomato soup sorry if that is spelled wrong. Have you tried chili over rice now that is good. But I have stand with your wife jasun most of the time I just like plan chili on nice cold night hot and spicy no rice no noodles just chili But I am northerner living in the south.
 
I like chili with noodles myself and by the way reef my wife buys low carb noodles.

Chili w/ground venison here. I like rice but I don't know about the noodles. Guess I gotta try that. Do like lots of chees and sour cream in it though. Bunn, I need to try the sausage. My is spicy. Never thought about using it.
 
I am with Spencer on this.. Deer meat chili.. Even deer meat sausage and chili.. I always make rice too.. You got to pour the chili over rice... Then get some crackers and crush them up all on the top with a little grated cheese ..And Don't forget Texas Pete's Hot Sauce..

The processor that does the deer sausage I that I get makes it spicy too. It adds a nice bit of flavor to chili, and it's also REALLY good in baked spaghetti.
 
Here in Arkansas, when you add macaroni to chili it is called "chili mac".

I make my "mass quanity" of chili in a slow cooker and after about the second day I will boil up the macaroni to stretch out the last of the chili.

Also, I believe that beans in chili are there as filler. I never put beans in my chili. Many years ago when I participated in chili cook-offs (mostly for the party, never won anything) adding beans to your chili would get you disqualified.

I understand most people want beans in their chili, it is just my personal preference.

I didn't say I add noodles or rice to my chili, not that I'm trying to claim that I am sane, just not a chili blasphemer.:)
 
Thank you Thad for a compliment I have never received or deserved.

Now for the blasphemy.

There used to be a popular plate lunch place in downtown Little Rock called the D&D Cafe. The one thing that was on the menu everyday was what they called "chili mac". All it was was chili poured over spaghetti noodles. 75% of the people in the place would be eating this, it is what they were known for. You would see the governor and/or the mayor from time to time, always eating the "chili mac".

The lady who took your order would shout out "SPE-SHEE-AL" for this. I usually just got the chicken fried steak.

I think they are in the old Rosarita Been plant? I remember them when they were in a building about 1200 sq feet down the road on horne. I had employees that work for them and me at the same time.

I use the products but forgot they are local.

I'm with Chuck and Thad. Anything in Chili is a foreign object. Chili Mac, I would eat Menudo first.

Chili is a Main Course or a condiment. Chili should be eaten alone or added as a topping, IE: Chili Burger, Chili Cheese Fries, Frito Pie, Chili over Rice, Chili over Cornbread etc, but never mixed. That is a major league Culinary Fauspaux, I may have to call the Food Police.

Venison Chili, da bomb.
