Grant you are right. While the solid fuel oven did burn - no damage was done to the building (only the fan).

The 6 other systems in this facility, however, were untouched by the fire in the wood oven system and continued to operate just fine.

Funny thing is that all of these other systems (that they continued to cook on) had long horizontals just like the wood oven and all were extremely dirty.

Wouldn't the fire department look at all the ducts while they were there tending to the fire??

Wouldn't they look a little closer - if so they would have certainly shut this place down.
 
Turned on the boob tube the other day and the news media reported that the fire that burned down half the strip mall was caused by a dryer left on. Apparently they washed and dried their table cloths at night, some how some way they determined that the dryer caught fire and burned the place down. How you can tell the cause of a fire when there is not much left is beyound me. Hopefull The next time I hear from these folks will be after they rebuild and want their hoods cleaned, on a regular basis!!! Dropped a lot of accounts neverless, found a newbie when picking up chemical gave him many early christmass presents, says he cleans oriental restaurants for $200 and takes him most of the night. I"m glad those days came and went real fast. He freaks out when I give him accounts and tell him how much I charge. Ya gotta work smarter not harder.
