Fryers can be a pain, if it's become an enamel you'll be there a while, unless they're ok with the surface being damaged. :banghead:

Of course make sure when cleaning them you drain them well. Use a Casutic cleaner with a surfactant to hold the chemical on the grease. Rinse and flush them well so you are certain to remove all the cleaner.

I boil any and all water so when they fill them no one gets hurt from water in the fryer. Oil and water does not mix....

I have pressure washed many of these, many of them brought out the rear of the kitchen so we could really clean them well. Often you also need some steel wool on the really tough stuff.

Be very careful about rubber seals the chems can cause they to leak. Shorting the equipment out can be very dangerous and start a Fire.

Steps to Clean the Coils:

  1. Begin by draining the fryer of oil and remove any loose debris.
  2. Fill the fryer with warm water and add 1-2 scoops of Fryer Tuck for every five gallons of capacity.
  3. Heat to a slow boil. Once boiling, maintain it for 20 minutes. The mixture of the heat and Fryer Tuck will loosen the debris that is attached to the surfaces of the fryer.
  4. Loosen any remaining stuck grease or debris with a long handled brush.
  5. Drain the unit.
  6. Use pot scrubbers to clean the interior surfaces.
  7. Rinse with clean water.
  8. Flush with vinegar to remove any cleaning residue and help prevent the breakdown of new oils.
  9. Towel dry the surfaces

Have them call GreasePro. :)

It's a delicate process. Lots of stuff to screw up. I recommend sticking with what you know, especially when it comes to equipment cleaning.

Got that correct Josh.
