Ok this place was cleaned a year ago and they barely cook at all.

If the fan is stuck to the roof and is clearly not going to tip over is that an excuse to do a lousy job??

The problem is plain to see.
Oscar the grouch cleaned this system last.
He enjoys the garbage and actually likes the disposable food handler glove stuck to the bottom of the fan. Goat.

You're never allowed to do a lousy job. You are required to do the job to the best of your ability. If you can't access the fan blades due to shingles and tar it is usually impossible to clean to bare metal. It may look lousy, but it could have been cleaned to the best of their ability.

That fan actually appears to be tippable.

If Oscar had only used "Matt's Marvelous Magnetic Scraper" and some hot water and chemicals, he wouldn't have left such a lousy job! The added benefit of Matt's scraper is the razor blade could easily have slit the tar loose and allowed for a nice tar hinge on the one side.

So if their abilities are somewhat limited should they be charging money for service and posting a sticker????
What does the sticker represent.

That fan could tip if you cut away the tar....but the duct is only about 2.5 feet. More work than it is worth

Some good caustic and a nice machine would take care of it.....depending on your abilities

I think they need to find a more able company to clean their system. Maybe they used that rent-a-midget, and they honestly just couldn't reach the stack.

Thats not a very long duct. It could be almost if not completly cleaned from the bottom if the proper techniqe was employed. The fan itself should be easily serviceable, pop off the ring. Spray er down. Get er Done! Goat

I bet it was cleaned better than that a year ago. I would put good money on this is an example of in-house cleaning by one of the cooks or prep staff.

Owner didn't like the results so he called a professional service company.

Ron one of the pictures is of the hood sticker. I'm guessing they aren't a high volume cooking operation.

Probably many years of grease in there - except for the little bit that was scraped.

Maybe the company charged per scrape on this one

Funny this should come up.We just got a country club today as a new account. They need the system cleaned but the fan has never been cleaned because the former cleaners did not like the pitch of the roof and did not want ot tip the fan...so they didn'tnow they have 4,000 in roof damage from the grease killing the shingles, tar paper and the wood roof as well.I said call us before they fix the roof and we will blow it out onto the shingles and they will get a fresh start on the new roof with a clean system hinges on the fans and a grease containment system.

Here's the pics

I've had some accounts that did not want to pay for hinges so the fan could not be tipped. I had no other choice than to give it a half-way cleaning. That EZ scraper did wonders up the duct from the bottom but the fan was not accessible and I made sure that I put that on the paperwork.

This is going to sound strange, Alexy, but I know I have seen that same greasy fan on the same pitched roof with the grease dribbles around here. It's like deja vous all over again. I recognize that nasty pitched roof - are you using ladder peak hooks to get up there? Or what?

Time is money-if that fan will not tip and the account will not pay for a kit-note it on your report as area that is not safely accessable.

I think David Lee got out of KEC.

Indy,
It actually has a flat roof at the center and a 4 foot wallthat raises up to meet the pitched roof.It is a 4 year old building that was built to look like a old farm house. there is a roof acess hatch up to the roof as well so other than a hinge kit it is not that bad. Only thing I see that is needed is a good tie off for the guy cleaning the fan and a hinge kit. the manager went up there and knew there was a problem.Thay have been talking withthe old company and they are the one saying it is Not thier fault becuase the fan could not be cleaned.
Unfortunately we are now involved becuase they have gone back and said it can be cleaned and gave our estimate and reccomendations for the hinges saying they never brought it up on any invoice they ever sent them or estimates. Personally I know we are right for saying it but I do not like the fact we are being used to show that someone else did something wrong.

Sorry to hear that Chris, seemed like he was getting along good there. I guess to paraphrase Matthew - Many are called but few are chosen.

Tell the mgr to demand the formeer co. go back and finish his job. You do the rest.
