Old rubberized grease

Got a restaurant that has caked on grease around their grease bin. It's thick. Its hard like tire rubber. I was hitting it with ebc and scrubbing then letting it sit then just holding the heat on it. I was using a #3 tip on my 8.7gpm to get all the heat I could. I could tell it was getting softer but wasnt going anywhere quick.

Im wondering if naoh would be better. They are on a monthly. My next idea would be going the night before and soaking with degreaser. Also a metal(brass) brush or a scraper.

What to do?
 
Scrape, strong caustic degreaser, dwell, scrub, dwell, hot water- turbo off top layer, surface cleaner, rinse- repeat, repeat.
If the grease build up is heavy it will take a few cleanings. Turbos cause damage, I only use them on hardened caked up grease and just to take a layer off so the next application of degreaser can penetrate.

A degreaser with potash will break down the grease quicker than sodium hydroxide- ether way it's will take some time to break the grease down if the build up is that bad.
