Add a min of 100 to the price "just because" once you see the varnish that is the grease there you will see why. Scrape the hard stuff first and use straight sodium hyroxide and soak it early to get the max dwell time.

Why waste your time, there are other/easier and more profitable places to do.
They called you for a reason, no one else wanted to do it!!! Make sure your insurance policy doesnt lapse. Hope you charged them up the egg roll.
 
We do many a night. They can be a pain and then they can be easy.

Remember when you bid and visit to always check , ask, or look around for what they use for oils. Lard, sesame seed oil, or other. Different degreasers work on different oils. Do they use low flame or do they like the turbo jet hit the ceiling tile kind.

Remember to have some sharp scrapers and patience in most cases.


Or switch over to the good side (FEAR THE FOAM)

I also have a fellow greaser who named his kids cat #7 with a side of rice.

That shows that we do way to many oriental joints.

1. Do at night only. Not morning.
2. Charge them for your trouble.....so much that you look foreward to the job.
 
Alright It has 2 fans, about 25 LF of hood this is a new york style fast food joint. China man said only clean from fan to back of hood he do rest of hood & filters. I said no sticker then! The hood tag from the last guy said last cleaning was 11-12-05 HOLLY S#!*. They use a medium flame I didn't ask about type of oil. I couldn't see the vent system or fans due to them still cooking while I was there. Im going to try & get there first thing in the morning to inspect it properly. I just stopped by to get an idea of what I was in for. Am I an Idiot for thinking of charging 750-800 on this one.

You are not crazy for trying to get that kinda of money just crazy to think they will pay that kinda money. 1st clue china man wants to help, no! china man wants discount he aint gunna clean crap, 2nd what happened to the last guy? Didnt make money never came back, china man got discount, white man made no money and went elsewhere to clean easier more profitable restaurant. Aint been cleaned in a while bet you a million the duct aint ever been cleaned right, your sticker you liability, 2 million says you cant get it to bare metal either. Why waste the time Tampa has thousands of restaurants, used to live there. Work smarter not harder!!! Schools, nursing homes, day care, churches, ect. or good people who dont mind paying a fare price for good service. You made 2 trips and no money, you have already lost money, he will work all the hood cleaners in town until he finds a sucker to do it for 200 dollars, thats what he paid the last guy. Move on! Just my opinion. He gunna pop your cherry alright!
 
That about twice as much as I thought he would pay, it been 6 months, I get 425 to do bbq joint takes 2 hours, no hassels. Good pay, good customer, gets good service.

Every once in a while I get the bug to clean an oriental place. So when the phone rings and I hear, "you clean hood? How much?" I take the bait. I asked the woman when it cleaned last, "6 month" she replies. What's the sticker say? "I no tell you! You come look. Give free estimate." Ok, it's on my way. I get there and look at the hood, 32 feet of those busted Prism filters. The sticker, I ask, "I take it down. How much?" She demands, "Two thousand dollars" I say as I walk toward the front door. "you crazy." she muttered, "Thank you and have a good day."
 
Three words: Run, Forrest run! If the filters are that bad and it has 2 fans $850 may not cover your chemicals. We just did a chinese system almost identical to what you are desribing and my guy was there for 14 hours and the system was nearly spotless and they still complained. The problem we run in to with chinese joints is that they are never maintained and when you come in to clean them they expect the system to be spotless when you are done for a "fair" price. If you want to pop your cherry, be my guest but it will be like banging a 35 year old fat chick with bad breath because she was the first women willing to spread her legs for you.
 
Pictures can be worth money

They dont like people taking pictures because the health department has probally already been by and told them to clean or else. Thats when they start shopping. Hay tell them u cleanie hood 10 tousand dollar or u guunna send pictures of roach infested chit hole restaurant to health department. Make sure you bring your wok from the house, that way when they flatten your face, so u lookie like dem, you will have something to swing back with. Hot wok flatten face real quicky!!!:D
 
We do several Chinese places. My favorite is the where I only do the Ansul system. They clean the exhaust system themselves. They clean the fan, duct, hood, and filters. And a very nice job, better than I would.

The next favorite is Hong's. If I do not call them, they call me. The job is nasty, but when we are done, I get paid. Chen also cooks up some fried rice for us.

One of the chinese places has a chinaman sit in a chair and watch us all nite. I told them I was offended that they did not trust us. "Oh no, we trust you. He make sure you not get hurt." N, he is there to make sure we don't steal anything valuable, like soda pop or ice water.

I actually charge the service to the Golden Frankie. Great food, & he leaves the resturant as soon as we show up. He pays on time too!

Jimmy has the service done on a regular basis. Every 12 months or so, his insurance agent calls and asks what day will work for us. He then makes the appointment w/Jimmy.

Some chinamen are great to work for. In 25 years, I personally have found 3. The rest are bastards. No, make that lyeing bastards.
1. "I know lots of chinamen, get you lots of work. You give me good price."
2. "No too much, other guy did for $100.00. You do for $100 dollar." He forgot to tell you that was 4 or 5 years ago, and he stills owes the balance of the bill.
3. "OK, you do work. I pay next Tuesday."
4. "OK, you do work. Clean this too. Same price."
5. "You missed place, clean better or I no pay."

Upon reflection, my favorite is not the first example. I got a call from a chinaman who just bought the resturant. My label was on the hood, from 2 years before. He wanted the hood cleaned. I told him to commit a physically impossible act with himself, I did not work for chinese people. That was my favorite.

No, No, my favorite was and is Fay. Her family has 2 resturants, which they rented/leased to other chinese people. We upgraded both resturants at $3,00 to $5,000 each, and got paid immediatly. She was also drop dead gorgeous, made me think impure thoughts

Several months ago I went to clean a Chinese place. I was w/o a helper, a fact that was quickly noted by Teem. He asked if I was alone and I told him how difficult it was to hire people to clean exhaust systems. Teem agreed help was hard to find. He told me "White man lazy, not work hard like chinese" I agreed Chinese worked hard. He asked what I paid, I told him. Teem looked thoughtful, and asked if I would hire him to clean his system. I told him yes, and that it was time to go to work. I had the hoods draped, the water supply run to the van, so all we had to do was go on the roof. He did not understand why we had to go on the roof. I explained the process, and we climbed the ladder and went up to metal roof to the peak. He did not like the ladder, he liked the roof less and especially did not like standing on the ridge, balanced like a monkey. I explained how to balance and not to step in the water, the grease on the roof and especially in the chemical, or he might slip and not stop until he hit the ground. Teem was liking this job less and less. After about 45 minutes, he looked at me and said, "My wife call, she need me, I go" I did not hear anyone calling him, I did not hear the phone ringing, but he did. His phone was in the kitchen, his wife was home. His hearing must be much better than mine. Of course I stayed, did the job by myself, w/o help. So much for the "lazy white man, not work hard like chinese".
