Vendor Change a big hassle?

Went to a restaurant, gave proposal. Followed up with manager and asked for DM info. Called DM gave price which was less than they currently pay. Went out and did demo, their current guy isnt doing anything. This DM had 8, 50 in the region. She is impressed and wants to switch but says it could take a couple of months to change vendor numbers etc. Get email from her today saying they decided its too much trouble. I would have saved her stores alone 5000 a year and actually cleaned the place, WTF?
 
Any advice for follow up? I did send her an email reminding her that she was impressed with the demo and how much we would save her. Im not giving up on this. Seems like I should reach out to her again in a few....unspecified time increments...but not sure what that looks like.
