How do you find systems so clean to start with?

Matt, do you guys put new hood globes in and take customers globes to the shop for soaking or you clean them at the restaurant? Or you just foam everything and whatever comes of off the globes is what they get?

We take whatever we can get these days. Haven't had a real dirty first service in a long time.
We just clean them there while we are doing the service.

That was not to bad of an issue. The big problem with dish hoods is the down blast exhaust fan.
