I could really use some help here. I learned my KEC from a guy in Pennsylvania. He has well over 250 customers. I noticed he was working too hard. he never really grew. after 12 years he is still only running 2 trucks. He even has an invalid phone number on his van. Either way He taught me to use hood pro soap from Envirospec and a Manuel bottle sprayer. no dwell time on the soap. Coming here i have started to downstream the hood pro which is 100 times better. The hood pro does not seem to do anything on Asian cooking oils. I wanted to go with a caustic mix to beat the oils. especially in the ducts. I pretty much just scrape them first than hit with 200 degree. Can some one offer a good mix combo to help speed up the process. Thank you

Seriously. I used caustic for the first time last week, mixed with a 50% bleach mix to clean a really long driveway with a lot of black mold. It got the driveway much cleaner, much quicker than just using cold water, but it was no fun to work with. I can't imagine spraying that stuff up a hood and having it dripping down.

I have never tried it, as far as caustic goes, I'm more concerned for my helper. I have suits, gloves, and eye protection for him, I would hate for him to get burned or myself.

All you need for asian oils is 1 gallon pottasium hydroxide,16 0z of caustic beads and you are done.That will make 1.5 gallons of strong kitchen cleaning.Thats good you have protective clothes and stuff to put on.The other week i had on a short sleeve shirt an that stuff felt like bees on my bare skin.

Don't know what ebc would do to kitchen good grease. Eric cleans hoods and uses ebc on a regular basis, maybe Carlos could have him chime in.

Hey John,

Here's what should work for Asian grease;

1-3/4 gallons of water
1-2 cups of caustic beads
1 good squirt of Dawn Ultra (Clinging and dwelling)

You can adjust with less or more caustic beads if needed...

Another way to clean asian grease is to use a gallon of gas and matches... ;) Just kidding! If you got an asian restaurant to clean it means you did not bid high enough... Personnaly, I stay far from those, they're a pita to clean! Make sure they stay on schedule because you'll have an hard time cleaning them each time!

Just my 0.02 cents!

Funny, I told my wife I hate these, but I just moved my business from Pennsylvania to Florida, I cant afford to give up the work. I do offer a lower price, but not a low ball price. I wont do Hibachi tables unless they meet my price, Those are a nightmare. I go in with a rotary nozzle first, then chemical, dwell time and yellow tip . My agreement forms do have next scheduled cleaning must be done at the proper time. Once i walked off the job because the owner refused to sign the form and he was wasted at the bar. see ya. My buddy did it and told me he lost his shirt on the job.

Well I did it,I wasn't that bad but I really fell behind when my filter soak tank sprung a major leak. Oh well. It comes with the territory. I did take note though that this is my second new customer i picked up from the same KEC company doing a poor job. They are not doing the ducts. This job came out pretty good. We signed a 1 year agreement for quarterly cleaning. Very nice what was your mix for this project.That looks very nice and clean.

I used Hood Pro from Envirospec. ( non-Caustic ) It comes in a powder. I just made it a bit stronger. Pre-soap I gave it a Blast with rotary nozzle with temp around 200*. Soaped it up, Let it well for about 10 minutes than hit it again with a 15* tip. I actually scraped the first duct. The grease was so think I didn't think any soap would penetrate it. To my surprise it came off very easy with scrapping.

Best soap for any job is before you (at each job) once you understand the chemistry.

The key with any chemical is allowing it enough time to dwell. If you just spray it on and then off all you are doing is wasting chemical and your time. Our Hood Cleaner is very effective on the Chinese grease. We also have a customer that uses it on BBQ racks.
